Peru: They carry out a dehydrated fruit and berry course in Arequipa

Producers, entrepreneurs and students from the Arequipa region participated in the workshop "Industrialization and Dehydration of Fruits and Berries", organized by Sierra Exportadora, which was held in the auditorium of the Catholic University of Santa María.

This workshop was led by the French specialist in dehydration of fruits and vegetables, Jean-Yves Cadalen, who presented the methods, machinery, products and dehydration trend worldwide, due to the extensive experience he has in the subject of production and marketing of dehydrated products.

The specialist urged participants to produce products based on customer needs and orders, as well as analyze costs, times, production volumes.

"He also recommended working with parameters to have standardized products in color and size, as this directly affects the presentations of the products to be marketed", detailed Anibal Vásquez, head of the decentralized headquarters of Arequipa of Sierra Exportadora.

After the exhibition and the respective guidelines, the businessmen and producers of aguaymanto of Majes district, carried out the industrial drying tests of this Golden Berry, under the supervision of the French specialist, in the pilot drying plant of the University Santa María, in the industrial park of the city.

. A total of 150 people participated, among producers, entrepreneurs and students.
. In Majes, 10 hectares of aguaymanto have been produced.
. The workshop course reinforced the knowledge of the producers of the Majes Berries Association (Arequipa).
